I have been so busy the past two days but I have really enjoyed them.
Yesterday I sold Sophie the Jeep. I’m going to miss her. She was the first big expensive thing I bought all on my own without a cosigner or having to borrow money from someone. I traded in my pink mustang convertible that my ex had given me to get her. Since we are going to Japan we had to figure out what to do with the cars. Even though Jeremy’s car is 8 years older than the Jeep, his car only has 50k miles on it and he owes more on his than I did. So we are going to have DMO store his car and we sold mine. Sophie will be missed.
I’m really happy that I have had a chance to start working on my photography again. I managed to get some cool pictures of the cats.
I did go back to the doctor’s yesterday. We are just waiting on lab results but the nurse told me the doctor already signed off on all the paperwork! I can pick it up Monday. Now all I have to do is get done with dental and we can turn everything in.
Every St. Patrick’s Day I have a tradition. The night before I always make Shepard’s pie and the day off I make corned beef and cabbage. I made the Shepard’s pie differently this year. I put a can of cream of mushroom soup in with the veggies. It was so good. Jeremy was bragging about it at the shop. To go with the corned beef and cabbage I made a Bailey’s Irish Cream cheesecake. It came out really well. I had never made a cheesecake before but I will be trying more cheesecake recipes in the future.
